In Spring of 2010, Craig Westphal joined the roasting department at Dillanos Coffee Roasters. Today, he supervises the department.

“When a batch of coffee is being roasted, the operator is continually making adjustments to the fuel and airflow to achieve the desired roast profile.” Craig reflects, “My role as the Roasting Supervisor is no different. Every day is different. Volumes, coffees, equipment needs, and scheduling is ever-changing.”
In many ways, Craig represents the best of Dillanos Coffee Roasters. A passion for quality, a spirit of community-first, and the humility to continue to learn and grow–even fifteen years later.

Second to Dillons Blend, Craig’s next go-to is the Dillanos Limited coffee currently featured. These rotating coffees are often highly-sought after and not widely available within the industry. Thanks to the ongoing connections Dillanos maintains with growing regions around the world, we often have access to micro-lots provided by farms pushing the limits or refining traditional practices.
“The Limited line of coffees continuously display unique flavors that show off the care that been dedicated to them at every step along their journey.” He continues, “From where and how the coffee is grown, to the manner in which they were meticulously processed, and, of course, how the coffee was roasted to perfection here at Dillanos” leadership and staff alike agree with how special the Dillanos Limited coffees are.
